The production process is very lenghthy, starting from the rigorous selection of the wood for making the wood staves until the manufacturing process of the barrel itself.
Natural drying of wood staves is done outdoors, through all kind of weather conditions (rain,wind,frost and natural heat). This stage lasts two years ans is necessary for the wood stave to eliminate bitter tannins essences and for aromatic compounds enrichment.
The actual process of manufacturing the barrels consists of:
- Processing staves
- Progressively controlled burning.The barrels are differentiated by roasting, four levels ( easy, medium, medium plus and strong), which release different flavors of wood as vanilla, cocoa, coffe or almonds.
- Each barrel is finished and checked under pressure.
